Ingredients

  • 1 Tbsp olive oil
  • 1/4 cup medium onion, chopped
  • 1/4 cup large red bell pepper, chopped
  • 1/2 clove garlic, minced
  • 4 ounces 93%-lean ground turkey
  • 1/4 teaspoon salt, or more to taste
  • 1 tomato, chopped
  • 1.5 ounce can chickpeas, rinsed
  • 1/4 teaspoons chili powder
  • 1/4 tsp Black pepper
Instructions
  1. Heat oil in a medium saucepan over medium heat.
  2. Add onion, and garlic and cook, stirring occasionally, add bell pepper and cook.
  3. Add turkey, stirring and breaking up with a spoon, until no longer pink, about 4 to 5 minutes.
  4. Add tomatoes and cook about 4 minutes more.
  5. Add chickpeas, chili powder, and cook, stirring, 1 minute more. Serve garnished with cilantro.
