I’ve been wanting to post a lasagna recipe for quite some time. Couldn’t decide which one should I choose first, the classic with beef, a vegetarian or this one with chicken. I finally decided on this chicken lasagna as it is lighter, and kids seem to love it. Beef lovers, can always replace chicken with beef in this recipe and get a classic beef lasagna.  For a vegetarian lasagna, you can replace chicken with mushrooms and you get a delicious hearty meal as well.

I was really excited about how this chicken lasagna turned out. I was afraid it won’t look as good as a classic lasagna, or that the chicken would be too dry, but actually, it turned just perfect. The lasagna had the perfect texture and taste. It was not too dry, not too soggy either, I could lift it from the dish perfectly from the first slice. Chicken Lasagna With White Sauce Recipe

Ingredients

  • 9-12 lasagna noodles, boiled
  • For Chicken Sauce:
  • 1/2 kg (500 g) chicken mince
  • 800 g tomato puree, (6-7 tomatoes, blend to make puree)
  • 1 medium capsicum, cubed
  • 2 garlic cloves, chopped
  • 1 large onion, chopped
  • 4 tbsp tomato paste
  • 1 tbsp chili paste
  • 1 tsp salt
  • 1 tsp full black pepper powder
  • 1 tsp oregano leaves
  • 2 tbsp oil
  • For White Sauce:
  • 2 1/4 cup milk
  • 1/2 cup cheddar cheese or mozzarella
  • 1/2 tsp salt and black pepper
  • 2.5 tbsp butter
  • For Topping:
  • 1 1/2 cup mozzarella cheese or as required.

  1. In a pan heat 2 tbsp oil on medium flame, add garlic and saute for 15 seconds, add onions and until they become soft/tender (6-7 minutes).
  2. Add chicken mince and cook until it's color is changed for 5-6 minutes. Add in tomato paste and tomato puree. Mix it well and low the flame.
  3. Add 1 tsp salt, 1 tsp black pepper, 1 tsp oregano leaves, and 1 tbsp chili paste.
  4. Cook on low-medium flame for 20 minutes, uncovered.
  5. After 20 minutes, add capsicum (optional). Mix it.
  6. After 5 minutes, the chicken sauce is ready, warm before assembling.
  7. Boil lasagna noodles according to the packet instructions. Boil in hot boiling water for 8-10 minutes, add some salt and oil.
  8. Make sure to use oil between sheets to prevent sticking.
  9. For white sauce, heat butter over medium heat, add flour and cook for 1 minute make sure there should be no lumps. Mix continuously.
  10. Turn off the flame or remove from stove.
  11. Gradually stir in milk, until mixture is smooth. Return to heat and stir continuously. Add salt and pepper, cook, until sauce boils and thicken.
  12. Turn off the flame and add cheddar cheese. Mix well.
  13. The sauce should coat the back of a spoon.
  14. For assembling. Grease 33 x 23 cm (13 x 9 inches)
  15. Baking dish with butter or oil. Spread a thin layer of white sauce.
  16. Place 1 layer of noodles and then a thin layer of chicken sauce.
  17. Spread a thin layer of white sauce about 1/2 cup. Sprinkle some mozzarella cheese. Again place 1 layer of noodles, a thin layer of chicken sauce and a thin layer of white sauce about 1/2 cup.
  18. Again sprinkle some mozzarella cheese and a last layer of noodles, last layer of chicken sauce, and the last layer of remaining white sauce about 3/4 cup. Sprinkle the grated mozzarella cheese over the top as much as you like.
  19. Bake at 375 (190 c) for 20 minutes, uncovered.
  20. After 20 minutes broil for 3-4 minutes at 500 f (260 c) for a golden brown top (optional).
  21. Set aside for 10 minutes before serving and cutting.
  22. Cut into desired pieces. Perfectly done from all sides.
  23. Serve and enjoy!
